KH Veitingar, Harpa’s catering partner, has introduced a wide range of sustainable and environmentally friendly practices across its operations. By prioritising locally sourced Icelandic ingredients, reducing single-use packaging, and offering diverse menu options, KH contributes to a better future for both the environment and society.
Local and Fresh Ingredients
KH Veitingar prioritises the use of Icelandic produce whenever possible. Fresh lamb, chicken, and fish are central to the menus — and notably, the fish is always fresh and never frozen. Menus are designed around the seasons to ensure freshness, minimise the carbon footprint, and support Icelandic farmers and fisheries.
Sustainability and Reducing Food Waste
Targeted measures have been taken to reduce food waste:
-Menus clearly label vegan, lactose-free, gluten-free, and nut-free dishes, making it easier for guests to choose responsibly.
-All disposable cups are certified and branded with the motto “Together Against Food Waste”.
-Leftover food is donated to Samhjálp, while guests are also welcome to take leftovers with them.
Vegan and Allergen-Friendly Options
At all receptions and buffets, vegan dishes are available, with salads carefully chosen to be vegan. KH also offers lactose-free, gluten-free, and nut-free options at no additional cost, ensuring equal choice for all guests.
More Reusable, Less Plastic
The use of reusable plates and porcelain at buffets has dramatically increased in recent years, significantly reducing plastic packaging. KH places strong emphasis on environmentally friendly alternatives.
Origin and Quality of Beverages
KH prioritises Icelandic suppliers for its drinks: beer from local breweries and soft drinks from Ölgerðin. Light wines, coffee, and tea are also served, accompanied by clear information about their origin and production. Supporting Icelandic producers helps reduce transport emissions while strengthening local industries.
Ongoing Environmental Focus
KH Veitingar collaborates closely with Harpa and Terra Environmental Services to continually enhance operations in alignment with environmental objectives.
KH is also part of Harpa’s Swan Ecolabel certification for conference facilities, which covers cleaning, waste management, and measures to reduce carbon emissions in line with international standards. The Nordic Swan is the official ecolabel of the Nordic countries and a Type I ISO 14024 certification.
Investment in Equipment
While commercial kitchen equipment represents a significant investment, KH always selects energy-saving options when purchasing new appliances, ensuring long-term sustainability.
Icelandic Suppliers and Farm Partnerships
Products are purchased directly from farms and producers, according to season and availability. This guarantees freshness and supports sustainable Icelandic agriculture.
Cutting Single-Use Packaging
KH avoids single-use packaging for food storage, opting instead for reusable solutions to minimise the environmental impact of plastic.
Cleaning Products and Certifications
Like Harpa, KH Veitingar uses eco-friendly cleaning products from Garri, certified for sustainability and quality.
KH´S Commitment
KH Veitingar is proud to support a greener future by:
-Choosing local, seasonal, and sustainable products.
-Reducing plastic use and single-use packaging.
-Encouraging customers to be aware of their environmental impact.
Through its seasonal menus and local sourcing, KH ensures it stands firmly with the community and the environment, benefiting future generations.
